Our Hidden Gems Dinner Tour features an assortment of local favourite Whistler restaurants and wouldn’t be complete without the inclusion of Stonesedge. We talked to the General Manager, Ben, about his time with the company and how he likes to spend his days in Whistler!
How long have you been with Stonesedge?
I’ve been in Whistler since November 2011 and started with Stonesedge after the takeover on April 21st.
What’s your favourite thing on the menu?
The Mac n Cheese is always a major go-to and I love that we have the option to add on braised bison, but it does depend on the type of appetite you’re looking for. The pork belly is also unreal.
On the drinks side, all our current cocktails were crafted by Angus Douglas. He’s moved back to Australia but has left his influence on the program. The “X marks the spot” cocktail is a huge favourite – it’s an outplay on an espresso martini. We’re actually now working on a full cocktail menu with the bar team for the colder season so stay tuned for what we have in store!
Where would you bring friends from out of town?
Longhorn Saloon is a sister partner of ours with the best atmosphere so that’s definitely the Whistler restaurant I’d bring them to. Otherwise, you can’t miss the snowboarding and skiing or mountain biking. I’m an avid motor biker and there are plenty of trails to see especially out by Mosquito Lake and towards Lilooet.
Who’s an employee that always makes you laugh?
Our head chef, Robert Macmillan, is the biggest uplifter and always has the best jokes!
What’s your night-cap of choice?
Canadian Old Fashioned without a doubt.
What is the best way to wind down in town?
It all depends on your lifestyle but I’m a fan of grabbing a few beers or spending the day at the Scandinave Spa. After work, I like to take the dog out for a walk and have some family time.
Favourite ski run?
I really liked the Million Dollar Ridge and Khyber Pass because up until recently it was a hidden treasure… but not so much anymore.
Best restaurant for a date night?
Us! The 1-litre caesar is just one of our many sexy cocktails that we offer. Our dessert program is also killer and features things like our chocolate peanut butter torte seen on your Dessert Tour.
